Black Bean Tofu Scramble

Tofu scrambles are a quick and easy meal to prepare, then reheat to enjoy any time of day.




Ingredients:

1 small yellow onion, diced

4 garlic cloves, diced

1 block extra firm tofu, drained, pressed and crumbled

~2 cups loosely packed kale or spinach, roughly chopped

1 can black beans, drained and rinsed

1 can fire roasted diced tomatoes

1 Tbsp cocoa powder ;)

2 tsp chili powder

1 tsp cumin

1 tsp chili powder

1 tsp salt

1/8 tsp cayenne pepper


Directions:

  1. Heat 1 Tbsp avocado oil over medium/high heat. Add onion and cook until translucent, about 5 minutes.

  2. Add garlic and cook another 30-60 seconds until fragrant.

  3. Add tofu crumbles and cook until heated through and slightly browned.

  4. Mix seasonings in and cook another 1-2 minutes.

  5. Add tomatoes and black beans and allow mixture to come to a simmer.

  6. Add greens and allow to wilt, about 2-3 minutes.

  7. Serve hot for breakfast, lunch, and/or dinner! Optional to top with guacamole, sour cream (or plain Greek yogurt), or my Avocado Crema!
