Tofu scrambles are a quick and easy meal to prepare, then reheat to enjoy any time of day.
Ingredients:
1 small yellow onion, diced
4 garlic cloves, diced
1 block extra firm tofu, drained, pressed and crumbled
~2 cups loosely packed kale or spinach, roughly chopped
1 can black beans, drained and rinsed
1 can fire roasted diced tomatoes
1 Tbsp cocoa powder ;)
2 tsp chili powder
1 tsp cumin
1 tsp chili powder
1 tsp salt
1/8 tsp cayenne pepper
Directions:
Heat 1 Tbsp avocado oil over medium/high heat. Add onion and cook until translucent, about 5 minutes.
Add garlic and cook another 30-60 seconds until fragrant.
Add tofu crumbles and cook until heated through and slightly browned.
Mix seasonings in and cook another 1-2 minutes.
Add tomatoes and black beans and allow mixture to come to a simmer.
Add greens and allow to wilt, about 2-3 minutes.
Serve hot for breakfast, lunch, and/or dinner! Optional to top with guacamole, sour cream (or plain Greek yogurt), or my Avocado Crema!
