It's also a great dish to prep ahead and let marinate in the fridge for an easy, healthy starch to add to your meals throughout the week.

1 cup dry wild rice

1 cup bone broth

1/4 cup almonds, slivered or roughly chopped

3/4 cup blueberries

3 stalks celery, diced

for the dressing:

1/4 cup olive oil

2 Tbsp apple cider vinegar

juice of 1 lime

4 garlic cloves, minced

1/4 tsp salt

1/4 tsp pepper

  1. Cook the rice: bring the rice plus 3 cups water plus 1 cup bone broth to a boil, then simmer for 45 minutes.

  2. While the rice is cooking:

    1. Combine dressing ingredients.

    2. Lightly toast the almonds.

  3. Strain rice and rinse under cold water.
